1、 Steamed buns stuffed with Spicy hot bean curd
Prepare a piece of old tofu, an appropriate amount of flour, and an appropriate amount of yeast powder. Pour 300 grams of flour into a bowl, add 3 grams of yeast powder, stir and heat water in stages to form dough. Cover and let ferment in a warm place.
After doubling the size, start mixing the filling. Rinse the old tofu and cut it into small pieces. There is no need to stir fry it in the pot. Put it directly into a large bowl, add a little ginger powder, add more scallions and chili noodles, and pour hot oil on top to stimulate the fragrance. You can also add some diced green and red peppers.
Then add salt, thirteen spices, light soy sauce, and chicken essence, stir well, and the tofu filling is ready. Next, take out the dough to exhaust the air, twist a long strip and cut the potions. Roll each potion into a bun skin and wrap it with filling.
Put it in the steamer to wake up for the second time, and then open the fire after it becomes significantly larger. Steam it in cold water for 15 minutes, then turn off the fire and stew for three minutes. The steamed bun with Spicy hot bean curd stuffing is ready, which is more satisfying than the meat bun.
2、 Sweet and sour tofu
Prepare a piece of old tofu, rinse and cut into large or small pieces. Add oil to the pot and heat it up. Put the tofu in and fry until golden brown, then remove.
Mix a bowl of sauce, add one spoonful of cooking wine, two spoonfuls of light soy sauce, three spoonfuls of vinegar, four spoonfuls of sugar, and one spoonful of tomato sauce, and stir well.
Heat the pot and pour in the sauce. Stir until thick, then pour in the tofu. Stir fry continuously until the sweet and sour sauce covers the tofu pieces. The sweet and sour tofu is ready, especially for rice.
3、 Shrimp and tofu soup
Prepare a piece of tender tofu and some large shrimp, peel off the shrimp shell, remove the shrimp line, wash, add cooking wine, salt, and pepper to mix, and marinate for ten minutes when the stickiness appears.
Bring to a boil with water in the pot, blanch the tofu cubes in the pot, and remove after one minute.
Add a little oil to the wok, preferably shrimp oil. Heat it up and add chopped scallions and ginger. Stir fry until fragrant, then pour in the shrimp and stir fry. When slightly discolored, pour in boiling water.
After boiling, add tofu cubes, season with salt, pour in starch water, thicken, and sprinkle a little fresh scallions.
